The bandeja paisa is the most representative dish and the emblem of Antioquia gastronomy, and it is typical of this region, Antioquia. One of the fundamental characteristics of this dish is its abundance, both in quantity and variety of food, in such a way that the complete bandeja paisa can only be served on large plates called trays.
The dish has its origins in the Antioquia wrap, which since the mid-19th century formed the only food that accompanied the muleteer in the Antioquia region and old Caldas.
