Seafood casserole is a typical main course in Latin American countries such as the Caribbean Region of Colombia (especially coastal cities such as Buenaventura, the Colombian Pacific, Cartagena de Indias, Barranquilla, Riohacha and Santa Marta) and the Ecuadorian coast. Its preparation, as well as its ingredients, tend to vary slightly in different regions. It includes ingredients such as prawns, shrimp, fish, clams, squid, fried vegetable stew (onion, pepper, tomato and spices) heavy cream, all cooked in coconut milk.
