This traditional preparation of marinated seafood, accompanied by lemon or sour orange juice, chopped onion, salt, pepper and cilantro, has become one of the most desired dishes by diners from the Colombian Pacific. The ancient indigenous people already fished in the sea or the rivers and brought their catch to the table to prepare the dish that has reached our days as an internationally recognized delicacy: ceviche. And although there are palates that cannot resist it due to its great acidity, in Latin America it is considered a luxury appetizer on any table and there are few who make it ugly.
