Pedro Ximénez

⧫ Jerez ⧫ Pedro Ximenez

Glass
Information

WINERY: Gonzalez-Byass

DESIGNATION OF ORIGIN: D.O. Jerez and Manzanilla-Sanlúcar de Barrameda

TYPE OF WINE: Sweet and Generous

VARIETY OF GRAPES: 100% Pedro Ximenez

ALCOHOLIC GRADUATION: 15.50% vol.

PAIRING: Traditionally it has been taken as a dessert wine although it fits perfectly as a mid-afternoon wine. It is quite a dessert in itself. It combines exceptionally with slightly bitter chocolate-based desserts. Without a doubt, the best ally for confectionery, ice cream with a strong flavor (chocolate, nougat). It also goes perfectly with dried fruits and some blue or intensely flavored cheeses, such as cabrales or roquefort.

RECOMMENDATIONS: service temperature 13°C

TASTING NOTES:

  • View: medium-high layer mahogany, bright, abundant thick, slow-falling tears.
  • Nose: good intensity, aromas of dried figs, raisins, honey, chocolate, subtle nuts.
  • Mouth: it is sweet, unctuous, notes of honey, dried figs, raisins, full-bodied, hints of liquor, chocolate, with a finish where the sweet notes of long persistence extend.
