Moka

A classic of the European stove, the attractive little Moka pot is making a comeback with coffee purists.

INSTRUCTIONS

  • Grind 20 gr of fine coffee
  • Unscrew the moka pot and fill the lower pot with freshly prepared water.
  • Place the portafilter on top of the lower pot and add coffee. Touch it to seat the bed.
  • Run your finger across the coffee to distribute it evenly, from left to right, then front to back.
  • Screw in the upper chamber. Use a towel to support the bottom, as it will now be hot.
  • Put the stove over medium heat. With the correct heat, the pressure should force a steady stream of water through the coffee into the upper chamber. Too little heat will result in lethargic action; if it is frantic, the heat turns down. When you're done, you'll hear a gurgling and hissing sound when the water runs out.
  • Pour carefully (the handle is often hot due to the small size of the Moka pot) and enjoy your coffee.
