Chemex

Invented in 1941 and still made with the same wood, glass and leather design, this is the only coffee maker included in the MOMA collection.

INSTRUCTIONS

  • Bring 520 grams of water to a boil. (Good for 2 cups of coffee)
  • Weigh 64 grams of coffee and grind coarsely.
  • Unfold the filter and load it into the Chemex. We like to line up the pleats with the peak.
  • Use some of the excess water to pre-soak the filter and heat the glass of the Chemex. Make sure to drain the water before pouring the coffee into the filter.
  • Pour the coffee grounds into the Chemex, trying to get the coffee "bed" as even as possible (tap and shake if necessary).
  • Starting in the center of the bed, begin pouring approximately 100 grams of water per minute into the coffee bed, working outward. Try to avoid pouring directly to the sides.
  • Wait 30 seconds for the coffee to bloom or expand. This maximizes the surface area and ensures an even distribution of the water.
  • Now pour water directly into the center of the grounds, pouring slowly and carefully. Our goal is to take four minutes for the full pour.
