French Press

Sometimes criticized by purists, the French press can provide a great cup of coffee. Its Achilles heel is prone to over-pulling, so transferring the entire pot to a jug once it is pressed is recommended, or making sure to only use a one-size-fits-all press.

INSTRUCTIONS

  • Boil approximately 600 grams of water for a 2-cup press.
  • Grind 64 grams of coffee into large chunks and then pour in about 250 grams of water to make it bloom. Give it a gentle stir and wait 30 seconds.
  • Pour in the rest of the water and let the coffee steep for exactly four minutes.
  • Press the coffee down firmly (it should give a resistance of about 15-20 pounds; too much and your grind was too fine; too little and it was too harsh).
