Corn purée served with roasted vegetables and beet croquettes

Sweet corn purée served with roasted vegetables (aubergines, zucchini, squash, broccoli, mushrooms, cauliflower, cherry tomato and whole chives) sautéed in sesame seed oil, topped with three beetroot croquettes ( roasted beetroot, kidney beans and peanut butter) bathed in a sriracha yogurt based sauce. All decorated with toasted almond slices.
